Description
Chef Stephen Gillanders had always envisioned opening his first restaurant in his hometown of Los Angeles, CA. But during Gillanders’ tenure at Intro in Chicago, he discovered his affinity for Chicago and decided it was home– and the future home of S.K.Y.
Apolonia followed S.K.Y. and is a contemporary restaurant with international cuisine located at the base of the Hilton Hotel in Chicago’s South Loop neighborhood.
